Saturday 10/28/23 BOH PM CG

Notes about the shift in general:

 

Very slow start to shift. Not much going on. Let Jose stay on til 4 instead of 3 due to the dough list still have 5 recipes as he had to make sub bread and being solo with dish is alot. He wanted to at least finish up dish so that Bailey would be okay to start pressing Sicilians and get dough list going as he has that plus dish to do. We had a small pop in marsal but nothing that Roxana and Danilo couldn't handle. Juan Carlos is doing a good job on pounding and he is measuring out cheese and also learning a bit of topping. He just needs to build up speed and also pound out dough just a bit more. I think it's the same thing when I first started and he just needs to pull dough another rotation or two. Carlos on Roto with Gambino is great. You honestly can't even tell he is a trainee. He is doing really really well so far. Everyone took break and breaks got done by 9:25pm. Evan and Lorena went to back for ten minutes or so and helped roll out some dough for Bailey. We do need to get a new scale for dough as the one I got is not working and the old one is off in measuring the weight. Luckily we have a bucket with a line on it that we use for water so we will need to use that until we get scale issue handled. I can stop by restaurant depot tomorrow but ace mart is closed on Sunday so I can not go to them. I will look on Trimark and see about getting some back up scales for dough as we still have credit with them. All and all good shift. Never got busy, Gambino left at 11:30pm but everyone else was a closer so they stayed and closed. We might need to look at bringing in a dish or dough person for a few hours in pm as its alot for dish and dough to keep up with even on slow night as he walked into a good size dough list and Sicilians to tend to. 


Next shift be on the lookout for:


Continue to monitor produce. Looks good today we just need to keep eyes on romaine, tomatoes, iceberg and cucumbers as those are the ones we are always seeming to waste due to them just not holding up. 

Keep looking at Sicilians as so far so good with them just know that when we get that colder weather here we will definitely need to make sure that we keep the ac/heat at a good temp when that happens so lets just keep eye out for the weather.

2. KMOD stuff:


We need to make sure if we see anything we are low on to speak up as I have been ordering tighter and tighter as we are trying to keep a sub 20% food cost so we need to make sure we are being very vocal on anything that we feel is too tight or too heavy on. Since we have gone to PFG twice a week vs three times a week we just need to keep eye on items. I did order up one case on grated parm as I know we have been going through that one a lot more as foh has to also fill up containers and portions.

House pies look great tonight! Sicilians have good rise! Food looked really great coming out of boh tonight!

6. How did you show love?


Let them know food coming out looked beautiful!


7. What did you teach someone today?

Showed Bailey how to replace stickers in label maker. I also showed Carrie and Aaron where the tabasco and oat milk is located at as they did not know.


8. Repair issues:


Stephen has been working on our list and is coming back down to bring us parts for roto to have as back up at the store incase we need it. Really nice having him down!!!


ECOLAB PEST came by and they let me know that the traps that they are putting out which are two by the back door, one underneath the table at roto and another one on line under table need to stay there. He said that every month he comes he is replacing them which means that someone is throwing them away. They will start charging us for those and on top of that if we do get a rodent problem it will not be covered on our contract if those are not in place. With that we also always need to make sure fly lights are on period. The one by back door has been on and good but one by dough mixer needs to be on as well. Let's make sure we are keeping those on!!!


The stuff about the stuff:  


Bo got into it with one of the homeless that came by this evening. We definitely

need to talk about in ops meeting this week as this guy cornered a guest at her car and luckily there were other guests that came out and Bo as I know at night her walking her pie to her car being cornered had to be a bit of a scare for her. Showed the police officer "Hall" the video of what went down as Bo did not throw first punch and he did not defend himself until swings were thrown at him and he was even spit on. I have never seen this man before but Carrie said she has and had not seen him in the past few weeks and she let me know that he is one that is aggressive and always starting fights in the area. We definitely need to keep eyes out for him as he is really aggressive and tonight I really did see why we need some kind of security at night not just for us but for our guests as watching that I felt horrible for the guest. 

Notes for FOH: Really good job tonight! Great attitudes and smiling faces tonight! Other than the incident that happened tonight everyone seemed to enjoy themselves eating and drinking. Continental club or someone had some kind of party as we did see a few guests in costume come by tonight. Good Job foh, really great teamwork tonight!
