Notes about the shift in general:  

When I arrived the weather was a little cool, but tolerable.  During my walkthrough I found that all GFIs were not tripped and all coolers were at the correct temperature. All stations were clean and food product was stored in the walk-in.  I did not have a problem with the alarm, so I believe  that the problem has been corrected. The only missed opportunity was bringing down tiramisu, cheesecake and sub bread. We had very little dough waste, which was good to see. All roto line temperatures were at the appropriate temperature. In the past we used to remove the chill rail covers. We are now leaving the the covers in place so that we can better control the line temperature. The line temperature has been a little off. The cooks will now close the lids when we are experiencing slower sales, food safety first. The produce truck was late today. There was a new driver.  The order was FIFO’d and red peppers are looking better .


The shift started a little slow but then picked up. i was only able to take a few things off of Dina’s prep list before going to cover marsal. Slices were sold in small pops. There were no overbooking or fly pies. 


After looking at a few proposal for grease trap cleaning, we were able to identify a potential vendor. I have sent the information to Mettler for final approval and further instructions.

 Longer term: The market could decrease in late February. However, we should still expect March to bring overall higher price points than YTD.

Prep: Dina was really challenged today with the prep list. The plan was to make it possible for Alisnaidis to be moved to the line if needed
