SUNDAY, JUN 30 2024 BOH PM WENDY

Notes about the shift in general:  Traffic was good today i was able to get here minutes early, starting having a chat with Raymond about the shift and some stuff that we would like to talk in the meeting, and went to do the prep list it was not a lot to do for Dina, so i had to give her the other list, and it was only a few stuff to do, but then we got the ticket print for tomorrow so i decided to get ready for that, i told Dina to made 5 extra containers of Italian assorted because we have 15 12' Italian for tomorrow, and i wanted to leave those containers prep specifically for that other so we still gonna have Italian for the shift, everything else i saw we were good on prep, we didn't had anything on the fly tonight, everything was coming put better than yesterday, i show the guys how to prep the pizzas with Ezzo on it, and we all learned how is supposed to be prep, so hope we are ready for tomorrow, Next shift be on the lookout for: Everything was looking good tonight, all...

6/30/24 Sunday a.m. w/Raymond

 Notes about the shift in general: The weather was clear and a little humid. The parking lot was free of debris and the dunoster lid was closed and not overflowing. The combination lock on the exterior back door is starting to malfunction. The alarm did not malfunction when I entered my code. None of the GFI’s were  tripped and all refrigeration units were at the correct temperature and working. It was a good close with all food moved to the dough cooler and all stations cleaned and organized. There was one missed opportunity, that was bringing down tiramisu to defrost for the next day.  The a.m. prep person’s schedule was moved back to 10:00  a.m. from 7:00 a.m. That meant that I had to start baking cookies, croutons and eggplants soon after I arrived.  Meredith informed me when she arrived that she was planning on making deserts, so she needs  cream cheese. The truck order was already submitted, but our Rep was good enough to add to our order for tomorrow...

SATURDAY, JUN 29 2024 BOH PM WENDY

Notes about the shift in general:  Shift was good we had a pretty good consistent shift, we had a lot of fly pies tonight more coming from Roto guys, for some reason i had to talk to them and told them that they needed to be more focused on checking pies before they put them and take care the way they put them in the oven because they were messed up the pies so we had to make them on the fly, and like that happened a lot of times, shift was good, Next shift be on the lookout for: We will need floor cleaner for sure, today we wash the floors with all purpose cleaner, at least it was a great smell going through the whole kitchen. 1.How many pies did we run on the timesheet?  4/5 5/0 2. KMOD stuff: We had an issue tonight, Meredith didn't know that she was supposed to wash the Romaine after Roxana cut it, so she just put it on a container and left it in the walk in, after a while i was making a salad and i saw that it was a little bit of dust the romaine so i decides to ask Mered...

FRIDAY, JUN 28 2024 BOH PM WENDY

Notes about the shift in general:  Shift was good, Next shift be on the lookout for: We will need to make the regular recipe for the rice crispy treats for tomorrow, we will need red pepper for us to be able to bake it tomorrow, we didn't had any to prep to bake for tomorrow, but we have 5 containers prep so we should be good with that, we will need more Lemons because we used half of box tonight to make lemonade and ceaser dressing . 1.How many pies did we run on the timesheet? / 4/5 5/0 2. KMOD stuff: Rice crispy was cut tonight, hope we are good for tomorrow. 3. Food stuff: Slices were good, Dressings were approved, Garlic knots were great, sicilians were looking amazing today, even the ones Bailey did tonight they were looking really good, bread was looking really nice, no fly pies, eveything was coming on time, the Basil that was cut tonight may not look too good for tomorrow, that was because it was Danilos first time cutting basil. 4. Friday 06/28/24 BOH AM Lana

Notes about the shift in general:  it was a good shift. the set up was solid. Dina and i walked in and got the prep list sorted. i explained to her the new process and the different lists. As people came in, i got them up to speed as well. they were excited to learn some prep. leo tackled dough with Don jose. Not a large dough list, but a good about for Don jose on his own. As people moved into their stations, we found the beginning to be quite busy for the day. We started off with orders that were larger and we struggled to keep up a bit because of a ticket that we never received ir we misplaced. Having to get that ticket out pushed back our make time on the other 2 orders that we had. Luckily those didn't end up coming out late, but the lost ticket did come out a tad bit late. We ended up catching up and maintaining good traction. Once things slowed, the line started working on their prep items, which kept them busy between tickets. We were able to run breaks by 3 and get everyth...

6/27/24 Thursday a.m. w/Raymond

 Notes about the shift in general: When I arrived the weather was clear and warm. When I approached the parking  lot it was free of debris and the dumpster lid was  closed and not overflowing. The alarm did not malfunction when I entered  my access code. None of the GFIs were tripped and all refrigeration units were operating at the correct temperature.  It was a good close with all of the line items relocated to the dough cooler.  Will’s training continued today and he is coming along very well. SOFO and BEK’s truck order have been entered. Lana is working to cover the job vacancy created with Alisnaidis’ resignation. We are looking for every possible means to reduce labor. Leti was moved from Sub/Salad to prep to learn more about the prep process. We are moving responsibilities around to ensure that we are not sacrificing our readiness to provide HSP level service to our guests.  Will was able to cover the back of house while I completed a few admini...

    Notes about the shift in general:   It was a good start to the shift. things were slow walking in. it seemed like will was doing good managing the kitchen on his own while Raymond finished up nites. Hes doing well in his training. I sat down with Raymond and we went over some game plan ideas for covering the shifts of Alis. the shift itself ran smooth. It wasn't a very busy shift, but we seemed to get a few pops through the night. I showed some of the people on the line how to prep certain items. Evelyn seemed to catch up pretty well. Juan Carlos caught up quick as hes already kind of prep trained. I caught bailey up on how to use the pizza log sheet in marsal. I spent some time updating next weeks schedule. we got a larger pop at the end of the night.
