WEDNESDAY 10.30.24 BOH AM WILL

Notes about the shift in general:

Good day. Busy day. Felt like the main focus was just keeping pepperoni house pies stocked for free voting slices. Decent amount of to go pies and salad/sandwich as well. Received both BEK deliveries and produce. Had the dough crew stock up for the weekend. Charles came down and showed us the vodka pie and the kale salad, I just showed PM crew how to make them. We will do it again tomorrow.


CG: Came in at 10:30am and took over marsal so that Will and the guys in back could handle the large orders and orders coming in and also run breaks. Marsal was steady from 11:30ish til 2:30/3pm. Went through alot of pep and cheese slices. Saw ALOT of voting slices. Guys did great job on getting pies out on time and making sure that I stayed stocked in marsal. Then around 4pm we started stocking up marsal again for pm. Once we had it stocked I ran marsal from 6p-6:30p so that Ramona could take break and thankfully I did as when she got back it started! The lobby was packed like a sardine can and just a river of guests flowed out the doors. I would say the voting for a slice is a bit bigger than we expected to take off especially for Wednesday. I stayed majority of the time on the line helping top and running back and forth to marsal to help where I could. Meredith did a great job of making sure she got dish knocked out and Sicilians done so that she could help out in marsal as well. I spoke with her and Meredith is going to come in tonight for a few hours to just help out. (6pm-830ish) We definitely need another body in boh. I ended up staying until 9:15pm once it calmed down. Will is also going to see if Juan Carlos can come in tonight for a few hours to help out as well. We want to be prepared and make sure we are giving our guests a great experience and we need more hands to make sure we do not run boh into the ground. I did let Raymond know if we need to run OT we will but that we def need to get someone hired on in boh to ease that valve. 



Next shift be on the lookout for:

Making sure everyone is up to speed with the new menu items. Making sure prep/stock/dough levels are good heading into what seems like it will be a busy weekend.

Be ready and prepped up a bit more than normal. We have been getting hit harder in am and pm especially. We need to make sure that any down time we are prepping items that are low. Now is the time to really keep our eyes open and look at everything. 

Be prepared to do the vodka and tuscan salad. Team was taught yesterday from Charles and team also got to sample it in am and pm shifts. Mettler is coming by today to drop off other items needed for doughvember.

Do not chance it, if you feel you need another body call someone in! We want to fly close to sun but lets not melt :)

3. Food stuff:

Sicilians were not only fluffy and gorgeous today, but also the easiest they have been to remove from the pan in months. House dressing tasted weak, I had Leo remake. All other product looked good.

Dough/Dish: Jose/Gerardo Meredith who did great in helping out the team wherever was needed! Really great job!

Z1R: Juan Danilo who did great and also had to start running into 2 day large dough as it looks like there was no large done on the 28th?

Z2R:

Z3R: PedroCarlos did a great job of getting house pies and pies being ordered cooked off. He helped top and pound when needed as well. Great hustle!

Z1M: Ramona did her absolute best to keep up and kept her cool considering she was getting slaughtered in slices. She kept moving and she got through it with the help of the team. We had her stocked up but when the big pops came through and all the tickets had 2-4 peps on each one we had to 86 pep for like 15 minutes to catch up. I have let Will know that for Thursday we will be filling the rack behind that sits next to marsal oven with pep and some cheese as we will be beyond prepared for pm today. Not taking chances. Z2M:

Sub/Salad: LeoEvelyn did a great job keeping up with all the salads and subs she was getting in and also keeping up with garlic knots and marinara for foh. She also helped top when she could.


6. How did you show love?

Told the boh team thank you and bought them all a shifty after work. I told Josh to comp off a shifty for everyone foh and boh as a thank you for the shift which they all appreciated. I also let boh know that I would see about who else could come in to help for Thursday which Meredith is going to come for a few hours and will is working on Juan Carlos coming in as well.

Nothing that is not already noted. I did notice one of the stairs from underneath does not look that stable, will get with Ross on Monday to see.
