Notes about the shift in general:

Slices and salad/sandwich continue to be the heavy daytime hitters, but pizza station got a little more action today. Used my downtime today to draft next week's schedule, print house pie temp logs, dough count sheets, and waste logs, finish a larger text version of the salad station cheat sheet, replaced the missing Supreme placard, put together 10 pizza kits, and ordered produce for tomorrow.


We have a freezer full of bread for the first time in a couple weeks so we can definitely afford to be more discerning. I've been having daytime expo check garlic knots after 2 hours to make sure we aren't sending out any stale ones.


Gerardo had an idea of how to reorganize the dough cooler and we knocked that out, Raymond and Ronaldo both gave their approval.

SOFO delivered basil.


BOH staff is understandably a bit on edge over ICE sightings around Houston, so I was glad to get the message from Adam stating that a strategy is forthcoming.

In writing next week schedule I've given Evelin, Lety, and Leo the exact same number of hours.

3. Food stuff:

Beautiful sicilians and house pies. House dressing tasted off and was tossed in favor of today's, other dressings and sauce were approved.
