3/25/25 Tuesday am w/Raymond

Notes about the shift in general:  When I arrived the recycle bin was closed and locked. There was no debris in the parking lot, just some leaves. When I entered the alarm was set. It was a good close with all areas cleaned and organized. All refrigeration was at the correct temperature. I completed the prep lists and place them at the work stations. The truck order was entered for BEK Hou and BEK SA. It was a slow shift but there were enough sales to help keep things busy. All BOH team members were able to take breaks. I am going to the store to pick up more spray paint for the floor grids and vents


Next shift be on the lookout for:

3. Food stuff:

Sicilians had a good rise and baked off nicely. Dressing were tasted and approved

We received that last two Milano Salami from Houston Deli for now. I sent out the update regarding Milano Salami yesterday.

6. How did you show love? I gave Leti a verbal high five for covering at marsal and sub/salad during my break 


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
