Notes about the shift in general:

Solid close. Definitely a slower week. Today we put away trucks from PFG, Houston Avocado, and BEK x2. Dough team cooked off and made 2 bread recipes. I told Juan and Pedro that it since it was a slow shift to work on the ceiling tiles, they did a fantastic job. I started next week's schedule and worked on rotating side work calendar.


Next shift be on the lookout for:

We will continue cleaning ceiling and walls. After that time for coolers again.

1.How many pies did we run on the timesheet? 

4 across the board

2. KMOD stuff:

I followed up with Gerardo and Jose about the cookies. Today's batch cooked by Jose came out perfect.

I also made sure the team is continuing to weigh the tomatoes for the margherita. 

3. Food stuff:

Perfect house pies, excellent sicilian rise, approved dressings and sauce.
