Notes about the shift in general:  When I arrived the dumpster was closed and locked. When I entered I placed the Houston Deli order for Friday. I did not place a BEK truck order today. This week the truck order will be entered Friday for Saturday. We should be back on our regular BEK order schedule starting Sunday. I did not enter a Sofo truck order for today, avoiding having to place a $500 minimum order for 3 bags of flour. We are fully stocked on flour until the next truck. The three bags were for pressing sicilians.


I worked on invoice credits and updated Delmy on the progress. We should be caught up on outstanding credits. I completed the review of the BOH and the K-mod's schedule and posted both. I submitted a quote from a security service and met with another security company that came by today. I left the card on Cynthia's desk. Oscar, the electrician, came in and changed the defective timer for the parking lot lights. The timer did not turn on, so he will be back tomorrow to make final adjustments. The information regarding the lights was communicated in Slack. truck


I contacted the tow truck service and expressed concern with their responsiveness. The owner apologized and offered to place a spotter somewhere on our block to let them know if someone parks on our lot without authorization. I will go over this in Ops and get back with him. The sales were steady for First Thursday. Breaks started at 6:30 p.m. and ended at 8:00 p.m.

6. How did you show love? I gave Erica a verbal high five for taking full ownership of the cleanliness of our restrooms. She is communicating the importance of checking the restrooms on regular intervals to the team. 


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
