MONDAY 11.24.25 BOH AM WILL

Notes about the shift in general:

Lots to put away this AM, as we ordered up for the week. Spent the morning making sure everything was organized and accounted for. One busted tub of Galbani ricotta added to the credit tracker. We cut Juan at 2pm as there was no significant rush. Slices stayed steady all day. I had Leo clean the outside of his oven and made sure he included portioning dressings as part of having his station ready. Dough make was heavy in anticipation of closure. No produce was ordered for tomorrow, we will be good without it.


Next shift be on the lookout for:

Rush refrigeration should be out to fix the produce cooler gasket. 

They are coming by to do maintenance on roto at 11PM tomorrow, I let the team know how to leave the oven in preparation.

Sicilians had a decent proof, house pies looked great, dressings were on point, produce looked good. Cookie bake was excellent.
