Notes about the shift in general:
When I started my shift and walked into the restaurant, everything looked pretty good, so I began with the preparation list and handed it out to each station. I helped Jose with the bread knots, while Pedro and Juan were filling and doing some prep work. Around 10:00, we started making all the pizzas. We made quite a lot to have everything ready by 11:00. Around 11:30, I started the breaks, and we managed to finish around 2:00. We were getting a lot of pizza slices, and the beef pepperoni was selling really well. Around 3:00, we started filling up the front of the table with a lot of pizza. When the afternoon shift started, I took advantage of the time to prepare the Houston avocado order. Then I checked that everything would be okay for tonight, and that's how I finished the day.

The Sicilian pizzas grew quite well; the slices are crispy, and the dressings and pizza sauce are perfect.
