SUNDAY 11.30.25 BOH AM WILL
Notes about the shift in general:
Standard issue Sunday: no deferred orders, slow start, but steady throughout the day. Lots of prep for all departments, but everyone got it done quickly. I supported the floor until breaks were done. I conferred with Raymond, then did the BEK order. After that I compared produce prices for the week, submitted tomorrow's order, and did BOH inventory.
Next shift be on the lookout for:
Large delivery from BEK. Check produce quality from HA1.How many pies did we run on the timesheet?
43. Food stuff:
Siclian's were looking flat this morning. Continued proofing next to an open warmer, first slice pies needed a corner cut out. Made new ones at noon that came out much nicer. House pies were solid, knots were good, crouton and cookie bakes looked great. The container on the line of house dressing was tossed, everything else was good.
