TUESDAY 11.4.25 BOH AM WILL
Notes about the shift in general:
I knew we had 27 deferred pies, 4 party salads, and 70 garlic knots to start. I purchased spring mix prior to coming in, as it may have not arrived in time through DiMare. Night crew left everything ready to go as planned. I helped Leti and Pedro get set up and through the big orders. I communicated with Andrew to let him know this was the order Diligent messed up previously, and it needed to go out complete and on time. Everything went as planned. Shift itself was a little busier than yesterday which was welcome. Slices stayed steady for most of the day. Dina cooked off cheesecakes and they came out looking phenomenal. I ran to the store for anchovies and started next week's schedule. I went over produce prices with Ronaldo so he could better divide the order. Received from BEK, Houston Deli, and Joe's Tea. Cozzini Bros came by and traded out blades.
