1/10/26 Saturday Mid w/Raymond
Notes about the shift in general: When I arrived the recycle dumpster was closed and locked. I entered the BEK truck order so that I will have more time to assist the team tomorrow. This week has been a steady sales week for what should have been one of our slowest weeks of the year. With sales at $15,187 at 9:00 p.m., we should end the day at or close to $17k. Running a 6% labor at 9:00 p.m. should be a good indicator of how hard the whole team pushed. Breaks started at 6:30 p.m. and ended at 9:00 p.m. All BOH team members were able to take breaks.
Next shift be on the lookout for
Health inspection. We are past due.
