SATURDAY 1/10/2026 BOH AM RONALDO

Notes about the shift in general:

 Starting the day when I arrived at the restaurant, everything was pretty good, so I started with the prep list, and right then the Houston avocados arrived. I checked them, everything was fine, and I put them away. Then I helped Don Jose with the bread knots while Juan and Raimundo were working on the line and also doing some prep. Around 10:00, we started making all the pizzas. We got an order for two pizzas for 11:00 and six more for 11:30, as well as some sandwiches. When we opened, we had everything ready, and at that very moment, a lot of tickets started coming in; it didn't stop, it was too much, but we managed to get everything done. I took my break around 12:30 since things calmed down a bit at that time. The whole team took their breaks, then we started restocking because we were running out of pizza slices and also finishing up some prep. When Evan came in around two o'clock, he made the day much easier with his help. We took advantage of the opportunity to prepare more pizzas, as more orders were coming in for the evening, so the day ended with plenty of work.




Next shift be on the lookout for:


We only have two cans of clams left, but Raymond is keeping an eye on them.

The Sicilian pizza needed to rise a bit more today, so I put it in the oven to help it rise. The pizza slices came out crispy, and the dressings and pizza sauce were delicious.
