Notes about the shift in general:
Starting the day, I was a little relaxed, but there was plenty of prep work to do, so we focused on that. Around three o'clock, we started making a lot of pizzas for the front counter, starting at four. I stayed at the oven, especially when it got busy when the afternoon shift arrived. I took my break, and when I came back, I placed the Houston avocado order for tomorrow. Then I helped with topping the pizzas and also helped Belinda a bit at the front. Starting at six, I began covering everyone's breaks. One large order came in with six pizzas, 14 cannoli, and salads. With that order, we were running out of cannoli cream. Once everyone's breaks were finished, I started making a new batch of cannoli cream since we had very little left, and today, we were selling a lot of cannoli.

The Sicilian pizza is super great, as are the pizza slices, the dressings, and the pizza sauce. It has a really good texture.
