2/13/26 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived, the dumpster was closed but not locked. When I arrived, I walked the store and found a few areas for detailing opportunities. Ronaldo and Will did a great job maintaining the operation store during my absence. I connected with most of our Reps and informed them that I will be in touch with them next week to go over any product concerns. I spent time with Cynthia going over operations including but not limited to World Cup ordering, product quality, staffing concerns, recent events and large orders. I went over prep quality with Ronaldo, Dina and Leo. The shredded lettuce was sub standard and they explained that the lettuce was coming from the vendor with poor quality. The lettuce came from Houston Avocado. I instructed Ronaldo that if we have to pay a little more, let's look at DiMare for our iceberg lettuce. He said that they are not much better. I contacted Sofo and asked them to get with me next week so that we can look at their iceberg lettuce, The shift was steady with good slice sales. Roto and Sub/Salad was also steady.

2. KMOD stuff:

Cynthia and Ramona detailed the Marsal display and were able to remove the majority of the crumbs trapped behind the glass. The display looks much better and gives a better presentation. 


3. Food stuff:

*The sicilian had a nice rise and baked off very well. Salad dressings were tasted and approved

*Cynthia found a case of fresh mozzarella that said sliced but was not sliced.

*We are keeping an eye on capicola.  It is coming out dry and shredding when sliced

*Cherry peppers had a gallon that was shipped slightly smashed. We are keeping an eye on that

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
