2/18/26 Wednesday Mid w/Raymond

Notes about the shift in general:  When I arrived, the dumpster was closed but not locked. When I entered the building, I started on the PFG truck order for Thursday. I contacted vendors regarding invoice credits and communicated with Gordon's Food regarding invoicing. I walked the store and identified areas that needed detail cleaning. It did not look like the green restroom floor was being mopped correctly, so I mopped to see how long it should take and what the floor should look like when mopped correctly. I spoke to the k-mods and asked them to put eyes on the restroom when the team members are finished cleaning. I had the BOH team members relocate the unused dough bins to the second floor. That freed up much needed space in the dough prep area.

Freddy had an accident on his scooter so I sent him home and covered Marsal. It started a little slow at Marsal and then picked up around 7:00 p.m. Roto and Sub/Salad's tickets were slow, but then they had a small pop around 6:30 p.m. Breaks started at 6:30 p.m. and ended at 8:00 p.m. We are caught up on BOH Food Handlers Certifications.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
