2/20/26 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived, the dumpster was closed but not locked. When I entered the store I checked the truck delivery to confirm that we are all set for the weekend. I sent through the portal for Ramona and Evelin. I added the broken ricotta old fashion to the invoice credit tracker and notified Delmy. I met with Ronaldo and reviewed our pending conversation with Freddy regarding his performance on Roto. He is still having some errors in cutting and boxing pies. During my figure 8s I pointed out to the FOH some areas of opportunities for correction. I communicated with Autochlor the issue we are having with the dispenser in the mop room. The dispenser was not shutting off without a lot of effort. The shift was steady with small pops at all areas. Breaks started at 6:30 p.m. and concluded at 8:00 p.m. All team BOH members were able to take breaks.

I created a digital training checklist starting with the Prep position. I will go over the list with Ronaldo and Will. The goal is to hold each trainee to the same level of competencies.


3. Food stuff:

*The sicilian had a nice rise and baked off very well. Salad dressings were tasted and approved

 *The shredded lettuce is looking much better. 

*The were a few loafs of bread that were a little to blond so they were discarded.
