Notes about the shift in general:

 Starting my shift, everything looked pretty good when I walked in. We already had all the merchandise, so we started bringing everything up and arranging it. I also made the preparation list and handed it out to each station. We started all the preparations, and at 10:00 we began making the pizzas. We also had a ticket for 11:00, so we hurried to make all the pizzas for the front. By the time it opened, we already had everything ready. The ticket went through without any problems, and Cynthia was also working up front selling pizza slices, which made our day easier. So I took advantage of the time to start the break; the whole team had their break. We also finished up some pending preparations. We were always on the move, and at 3:00 we started filling up with a lot of pizzas for the front. I also placed the Houston Avocado order for tomorrow; all the products arrived in good condition.

The Sicilian pizzas look great, and they've risen nicely. The pizza slices are crispy. The dressing and pizza sauce are great. It has a very good flavor and a pretty good texture.
