THURSDAY 2.12.26 BOH AM WILL
Notes about the shift in general:
Received an order from PFG this morning. No large deferred orders, the first half-hour was crickets, and then everyone wanted slices. Between 11:30a and 12:30p almost half the slices we have sold so far today went. Everyone had a good amount of prep leading into the weekend. Leti did not finish her prep and I covered salad/sandwich when Evelin arrived so she could finish it. We cooked pies for the FOH manager meeting to determine where the standards for a regular pie and an extra crispy should be. I went over the cooks with everyone working BOH today (Pedro, Leo, Leti, Juan Carlos, Gabino, Meredith, Evan, Evelin, and Bailey) as well as Gerardo who was on expo. I took photos and conveyed this information to Ronaldo and Raymond. This will be an on going process. In my downtime I placed orders with Houston Avocado, BEK, and SOFO.
