Notes about the shift in general:
Definitely a slower shift. Little pops on each station but no big rushes. There was a good amount of prep to do, and two recipes of bread for dough team. We cut Leti at 2pm, Pedro at 3:30am, myself now that the 4pms are here. Ronaldo and I discussed the upcoming deferred orders and the additional prep/ordering they will entail. There is a new flour bin downstairs which will be used for cookie flour. Flour for dough will go where cookie flour went previously. Extra dough bins were moved upstairs for additional space. Ronaldo ordered Houston Avocado for tomorrow. I spent some of my downtime looking at where we are at this year vs last year in terms of sales. Dina prepped extra RKT for tomorrow's order.
