Notes about the shift in general:
Classic front-loaded Wednesday morning. Started off with deliveries from BEK and Houston Avocado which were organized and put away. We had two deferred orders 22 pizzas, 3 party salads, 82 garlic knots, and 16 RKTs due at 11 and 11:15. I made sure the large order got fresh RKTs. Diligent was here on time and everything went out without a hitch. We were cooking two bread batches today so I helped Jose with the last round and cooking cookies. Raymond had a couple of cleaning focuses for the crew that they addressed along with finishing prep during the mid-afternoon lull.
Next shift be on the lookout for:

Cesar dressing was a little off, it was replaced in favor of todays which was on point. It was 65 degrees in the building when I arrived, so Sicilians were a little flat. With a little additional heat and proofing we were able to get them where they needed to be. House pies looked great, knots were good,4. Sales for the shift:
