3/10/25/ Tuesday Mid w/Raymond

Notes about the shift in general: When I arrived, the dumpster was closed but not locked. When I entered the store I started to work on the truck order for BEK. I walked the store to check on supplies. I completed the shift hand-off and all areas were stocked and ready. I made a number of figure 8s and met families that said really enjoyed their meals. The financial influence children have over their parents is grossly underrated. I spoke with a guest in town for the convention at the George R. Brown. He said that his slice was extremely good. I asked him to let his colleagues know about us and he promised that he will be back with other attendees from the convention.

The K-Mod's schedule was competed and published for next week. The shift started a little slow and then picked up around 6:30 p.m. All stations were popping and putting out great product. Breaks ended at 8:00 p.m. and all BOH team members were able to take breaks.

Next shift be on the lookout for:

2. KMOD stuff:

*Please continue to challenge PAR bake on the house pies and Roto pies. 

*FOH please go over the deferred order with the k-mods

*Please remembers to count Mike's Hot Honey and restock to 40.

This week we had an increase of hot honey during the count.

3. Food stuff:

*The sicilians had a nice rise and baked off very well. Salad dressings were tasted and approved

*The shredded lettuce is still looking fresh. 

I noticed during our daily count of hot honey that our inventory is increasing on occasion. Our current method of selling the honey, allows for it to be missed when it is sold with another items. That places the honey back into our inventory increasing the count. Twice I noticed that the honey was  about to be missed and we were able to correct it. Josh and the team made a very good suggestion and I will present it to Cynthia for approval.
