Notes about the shift in general:
Starting the day, when I walked into the restaurant, everything looked pretty good. Everything was organized, and there was a lot of merchandise. I checked everything; it was in good condition, and we started putting everything upstairs and arranging it by date. Houston arrived at that moment. I checked the avocados; they looked pretty good. I arranged everything and started with the preparation list. I helped Gerardo with the bread knots while Juan was filling things on the line. We did some prep work starting at 10:00, and then we started putting all the pizzas out front around 11:00. We had everything ready. Today we had more activity than usual, especially with the slices; we sold a lot of pizzas to go, as well as sandwiches. I started the break around 11:30. The whole team had their break. Around three o'clock Juan left, and Leo and I took turns working in front. When the afternoon shift arrived, it was also Johnny's first day at the dishwasher. I showed him everything and the whole store, and I also taught him how to plan the Sicilian pastries and the whole process involved. Then I checked that nothing was missing for the evening.
