SATURDAY 3/21/2026 BOH PM RONALDO
Notes about the shift in general:
We started the day with a good amount of prep work, and we also spent time stocking up the front display with plenty of pizzas so we’d be ready for the afternoon rush—which really picked up around 3:00 PM. I spent some time at the oven; once the afternoon crew arrived, I joined Gabino there to help out. Things were a bit slow at first—most of the activity was happening up front—but around 5:00 PM, orders started trickling in. We took advantage of the lull to restock the front display with even more pizzas. Around 6:00 PM, I began covering everyone’s breaks, stepping in for each person as they went off duty. The whole team managed to get their breaks in. Then, around 7:00 PM, we got hit with a rush at the sandwich station, fielding a flurry of takeout sandwich orders as well as pizzas. We kept up the pace, then went around checking to ensure nothing was missing for the evening shift, and lent a little extra help to the team—especially since they were one person short at the oven today. Finally, seeing that everything was running smoothly, I wrapped up my shift.
