4/2/26 Thursday Mid w/Raymond

Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store, checked supplies and placed the PFG and BEK truck orders. I reviewed the pending Art Car Show event. Cynthia and I met with the vendor replacing the tow sign. They realized that the signs would have to be moved slightly further back to prevent trucks from hitting them. The First Thursday was not the same. They had Art Cars on the street. It did not appear that they were overly concerned about prevent their cars from blocking our driveway.

I met some very nice guests during my figure 8s. A husband and wife said that they were taking their son a large pizza. He is about to enter boot camp and he wants his last civilian meal to be pizza. She said she does not mind sending her son off with a stomach full of Home Slice Pizza.

The shift started slow, but then started to build around 7:00 p.m. Breaks started at 6:30 p.m. and ended at 7:45 p.m. All cooks were able to take breaks.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies and Roto pies. 

* FOH please go over the deferred order with the k-mods

* Let's be sure to confirm that the correct dates are on all containers.

* There were some black spots on a few of the dough bins that had dough. We discarded the dough and I am trying a bleach solution in the bins to see what happens in the morning. 


3. Food stuff:

*The sicilians had a nice rise and baked off very well. All other dressings were approved. 

* Whole pies and slices are looking very nice.

* At this time, there are no deferred order for the rest of this week.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
