Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store and checked supplies. I entered the truck orders for Sofo, BEK and PFG. Sofo provided a lower cost list for a few items with Charles' help. The week's sales started off on track. Thursday did not live up to the anticipated sales. Sunday also did not perform as well as anticipated. During my guest connection I met a mother and her two sons from Austin. They said they were so happy to find out that there is a Home Slice Pizza in Houston. I showed Will how to send delayed messages in Slack. This is very helpful when you have several follow-up communications. The shift started off slow and stayed calm until 6:00 p.m. Breaks started at 7:00 p.m. and ended at 8:30 p.m. All BOH team members were able to take breaks.

The sales last year Easter week 2025

• Total Net Sales: $71,405
• Total Orders: 2,791
• Weighted Avg Order Value: $25.58

It does not look like we will outperform last year's Easter week. As of 8:45 p.m.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies and Roto pies. 

* FOH please go over the deferred order with the k-mods

* Let's be sure to confirm that the correct dates are on all containers.

3. Food stuff:

* The sicilians had a nice rise and baked off very well. All other dressings were approved. 

* Whole pies and slices are looking very nice.

* Please pick up turkey. That will get us to the next Houston Deli truck.

*Produce cost is up across the board. I am sure this is the impact of higher fuel cost. I am going to visit the Houston Farmer's Market to see if local growers are charging what the market will bear or if growing locally allows them to sell at a lower price point.
