Notes about the shift in general: When I arrived, the dumpster was closed and locked. I walked the store and checked supplies. I entered the truck orders for Houston Deli, Sofo, and BEK.

Will and I reviewed the Art Car show checklist and we started setting aside the items we will use at the event. I covered part of the lunch rush at the marsal. I went to Restaurant Depot to pick up items for the Art Car Show. The K-Mod schedules were completed and published for the next three weeks. We are approximately 2K below our normal sales for a Thursday at 8 p.m. We should be able to make up this deficit by 11:00 p.m.

The shift started off slow and then picked up at 6:00 p.m. Both the Roto and Marsal lines did well during the pop . Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies and Roto pies. 

* FOH please go over the deferred order with the k-mods


3. Food stuff:

* The sicilians had a nice rise and baked off very well. All other dressings were approved. 

* Whole pies and slices are looking very nice.

6. How did you show love? I gave the team a verbal high for keeping up with the pop. 


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH. There was a small record skip with one slice order. The ticket was printed twice.
