FRIDAY 4/10/2026 BOH PM RONALDO
Notes about the shift in general:
The day started off quite busy; we had a lot of takeout pizza orders going out, and we also had prep work pending. Once things slowed down a bit, we finished up the prep work around 2:00 PM. Ramona messaged me to say she wouldn't be able to come in today due to an issue she was having; I let Will know, and we ultimately decided to have Bailey cover the front counter until 11:00 AM, with Belinda taking over from 3:00 PM until closing. Around 4:00 PM, we started stocking up the front display with plenty of pizzas. I made a Houston Avocado pizza, and then I worked the front counter myself; it got quite busy—both with pizzas and salads. I asked Belinda to slice more meats so we’d have enough for tomorrow, and Lety worked the line starting at 6:00 PM. Bailey covered the front counter while I filled in for breaks. The whole team took their breaks around 8:00 PM. I was told we were out of cheesecake, so I sliced a new one; I also organized the walk-in cooler for vegetables, as a new shipment is arriving tomorrow.
Next shift be on the lookout for:

Keep an eye on the cucumbers.

The Sicilian slices look really good. The pizza slices are crispy. The Caesar dressing had separated, so I told Lety to make a fresh batch, since the one in the back had separated as well.
