SATURDAY 4/11/2026 BOH PM RONALDO
Notes about the shift in general:
My day started a bit early; upon arrival, we worked on prep tasks, and I also opened up the salad station—since Lety wasn't due in until 12:00, we spent the time stretching out pizza dough and ensuring the salad area was fully stocked and ready. We also had an order for 10 pizzas and a Party Salad platter scheduled for 12:00. I manned the salad station for an hour until Lety arrived. From there, I went back to stretching pizza dough. We started taking our breaks around 12:30, and the entire team took their turn resting. We were constantly on the move throughout the shift. It was quite a busy day—we didn't stop working—and around 3:00 PM, we began restocking the front display with plenty of fresh pizzas. The evening crew started arriving around 4:30. I took my own break, and afterward, I assisted Gabino at the oven. Things picked up even more around 5:00 PM; at 6:00, I began coordinating breaks again, covering for each person as they stepped away. When Evan left for the night, I asked Billy to take charge of the front counter until 10:00 PM, at which point Danilo would take over the front station; I spent that time monitoring everything to ensure things were running smoothly. As the night went on, I noticed there was only one cannoli left in stock, so I whipped up a fresh batch—and that’s how I wrapped up my shift.
