PM: We ran time trials this evening one at 5pm and one at 7pm. The first time trial we fell behind due to some bad cuts from Mikael on Roto but with it being only his 4th shift he did well. He had never done party cuts so that threw him off and we had to make 4 fly pies which caused us to get behind on the first round. Marsal did good first round and salad sandwich did okay for most part, just got some orders swapped for here and to go. Second round team did much better. We averaged 5.36min early on pies so that was great for the pm team to achieve tonight as they are greener and not had all the practice like a lot of the am crew has had. Rubil did great on roto and has been really getting better every shift. Everyone really wants to do well and care about not hitting times. I was on line helping toppings out and monitoring times and giving advice on how to speed up toppings and how to adjust when fly pies hit the line. Feel really good going into tomorrows friends and family with tonights team starting to get better each shift. We have all product in house and will be able to have full menu tomorrow. Cristina and Jose being here this week is great. I have let managers know to glue themselves to Cristina and Jose and learn whatever we can from them as they know HOME SLICE. It's also really nice to see the team getting along and building team camaraderie. We did go over red bells again with Joel in prep as they are just cut in half and gutted not cut all pretty. We are losing red bell by doing this and we are paying more for those at the moment from Hardies as they are the produce company with the best looking ones so please let's keep that in mind. Let's not throw money out the window if we can help it. I had Bailee order our salad bowls and dressing bottles for large orders so those should be in shortly. We also went over Romaine cuts with prep as we are getting too much yellow. They need to be cutting that out and we have gone over this with them. Sub bread looking better. Cristina helped out with that with Raymond today and they look good. She is going to be in early tomorrow to bake off cookies with Juan P in the am. All and all really good pm shift. We do need to keep them busy and making sure they are not sneaking off line. They were better about it tonight and I did not have any issues with that. Recycling is put outside as well. I do have Rubil working a double tomorrow and Evan is going to work a 12-8 mid instead of closing so he will be here thru the day for us as well. Looking forward to tomorrow and how our team in boh does!
