12/23/22 BOH AM Shift:
- Wendy and Islay did not show up. Wendy lost power at her house in middle of night and was not able to get ahold of us until 8:30am. All the other prep were able to come in so I told her to just stay home and so she could deal with the issue of no power and her daughter this morning. Islay finally did text me and let me know that her father is very ill which we have known and she could not leave him today. She was going to have Estella come in and work her shift but unfortunately last night Kaylana sent Estella home as she started to run fever and was getting very sick. We are okay without them today as we have enough staff at the moment as we have been prepping up this week as we had a busy first week open.
- Went over close issues with Kaylana when she got in. There was a ton of water in the employee restroom and mop sink area. I squeegied it all out just need to make sure we are tidying up the mop sink area and restroom before we leave. They also left the baby oven on. Luckily there was nothing in there but this is something in close notes will verify baby oven off and roto and marsal turned down low.
- garlic knots look great!
- We baked off 60 chocolate chip cookies today and ALL were GOOD!!! Really great bake off by Jose Puac this morning on cookies, sub bread and croutons! We need to look at having him train another two people in am to do this as when he is off we need to still be able to have these baked off correct.
- Sicilians: Half looked great, the other half need more time out. We are monitoring this through the day especially with the weather today being below freezing.
- All invoices are in XtraChef and imputed in spread sheet. I have my invoices in Bailees wall folder already for her.
- Mario S. came in today and we had a talk. He had missed all this week so far as he said he did not know his schedule. I spoke with him and let him know that we want him on the team but we need him to show up. This is his last chance and is on 1 month probation and he can not be late or miss a shift otherwise he will not have a job. He understood and apologized, I let him know we understand things happen but you have to call or show up and let us know something otherwise its job abandonment. He understood and I am having Kaylana get with him before he leave today and make sure he can log into 7 shifts. She let me know that she has shown him this more than once since training. (I am giving him the benefit of the doubt as he is older and not tech savvy and has been a strong worker for us since he has been with us)
- All receipts are in for AMEX card and sent to invoices@homeslice.
- Drains were covered with cardboard this morning. Made sure to let guys know that all drains not just one near them.
- Went over slices with Dez. He seems to have found the spot that he works best in. He has been stepping up more and more and showing progress. He came in with pants with no holes as he said he would. He did show up 20 minutes late which we spoke about but with today I understand as the weather this morning was.
- Ideal is someone we are going to have a talk with. This morning I put him in Z1m and he was trying to tell Jodi and Dez what to do. Then when they asked for pizzas he did not respond to them. Then he asked me "how to I communicate with them if we don't speak the same language?" I let him know that I was going to bring Jose Perez from back and help out as Ideal does understand and needs to adjust his attitude with staff he has not worked with as much. We are going to do this today and let him know this is not how it works at Home Slice and we work as a team. We have staff with language barriers and they are able to work together and get it done. He just needs to tone it down a notch. Shows up and comes ready to work but not respecting your teammates will get you fired.
- Went and picked up Spinach, Red bells and basil as we were a tad low on that and we should be good to get through weekend as we are closed Sunday.
- There was just one over booking at 2:30 today. I have been trying to keep eye on this and make sure to communicate this to expos just so they know why a pie might lag a bit. Expos have been great and anytime I run with Ross as an opener it's smooth. So glad he is on the team bc from what I have seen in past couple weeks now that he has gotten to actually be up front is how great of an asset he is for the foh. I can tell the employees respect him and follow him. Just really great to see!(also makes boh job easier when not as many mistakes are coming into the boh)
