12/24/22 BOH CHRISTMAS EVE!

  • Brought in Shipleys for the boh staff this morning since it was Christmas Eve:) Everyone got to have some and did buy extra so that when foh came in they were able to enjoy them as well :)
  • Cold day but sun is out! Not many people on the roads that I saw coming in this morning or even running down street to grab something. 
  • We had 5 deferred orders which was nice! 
  • Garlic knots looking good! They are in walk in as they are ready to go! No need for them to be outside of walk in.
  • Everyone showed up today. It has been a bit slower so we are cross training Wendy on pounding and topping in marsal area today. She pounded out and topped a her first pie solo and it looked good! We are going to start training her for shift lead in boh! Super excited to add her to the team! I think she will be a great asset for us in boh.
  • Sicilians: Some look great and some look like they need more time today still. Im sure the cold weather is not helping us with that but we are monitoring this very closely. Last couple days the boh area where we are keeping them in the warmest spots is not getting that warm as it's below freezing outside. 
  • Cookies look good!!! All but 2 cookies of the 12 trays were not used as they were flat but the rest looked good and we were able to sell! We will continue to watch and make sure we keep this up and  see if this has fixed the issue!
  • Will was in marsal today which he did great at, he's usually on roto so little change of pace as we had Pedro on roto and letting some of the line guys get some practice in as we are slowly cross training on down times when slow and when we can. Really great that everyone seems to really want to continue learning more and more! Feel really good about our team. There are a few that I do not think will make it just from a stand point of just not being a good fit. They are....
    • Jeffery: super nice guy, needs to hustle more and I am not sure if he is going to last. We have also told him that managers break employees and employees do not decide when they want to go on break daily. I let him know this as has Kaylana and Raymond at this point. I let him know if he is that hungry before we start breaking then he might need to eat a bigger breakfast or eat breakfast as just couple hours in his shift he wants a break. We will need to pull him aside next shift and talk with him and see how he progresses after our talk.
    • Jordy: He has had his issues with doing what Raymond says and I have let Raymond know to send him home if Jordy steps out of line. Jordy is on probation at moment and has been doing what he needs to but Im still on the fence. We will give him this next week to see if he continues to do good or tries to step out of line. Jordy is a nice guy, just very childish at times. 
    • Darrone: Seems like a nice guy, he is new so we will have to watch and monitor how he is doing. He has not done anything in first week that was super impressive. Seems to be able to handle dish when I have seen him. We will monitor and make sure but I just have not worked enough with him or gotten time with him to see yet. 
  • Some guys and gals that are doing awesome are....
    • Will: He has become solid on Roto. He is always in a good mood, smiling and just great team mate. He has manager experience and I am hoping that when the second store comes that he will make his way back into KM world as he had been one before which shows in his dedication to detail and just caring about what he puts out in general. He love the feed back and has just been a great asset in boh so far. I did bump him up a dollar more once we opened as he is one that we need to keep!
    • Jose Perez: Pounder and Oven guy. Pounds nice pies and can run roto and marsal as well. He has been a great team mate to the team and has stepped up in more of that leadership type feel on the team. Other guys look up to him and he has been great with helping out and making sure guys are doing it things the right way. He lets managers know anything that's up in boh and just another great asset to this team. I also like Will gave him a bump up as we opened up as he is one to keep.
    • Evan P: What can I say about this kiddo! He is a natural pounder and this is really his 2nd job. He was at Sonic for a few months before Home Slice and we stole him from them. He has been pounding good since day one of training and has gotten better and better. For his age to be able to hang on Z1 and pies come out the way they do is impressive. Great personality, good teammate and asset to us in boh. He is the best we have besides Jose. Evan really took time with Francisco during training and no joke he is on his way to learning how to do infinite tosses with pies that Francisco does! He is in college and will be going part time but I also gave him a bump up at opening as we are going to try to keep him as long as we can until he goes into med school! 
    • Leticia: She is about the sweetest person ever! She takes so much pride in her work and in her station. She wants it all to be perfect every time. She loves the feedback and no matter what has a smile on her face and positive attitude. She is always willing to stay and help and just a great team mate to have. She makes beautiful subs and salads, she is does need to continue to work on speed but she is doing a great job and we have defiantly let her know! 
    • Myke: He has been so great on dough! He's been a great asset to team and I would love to see him maybe move up in time. I believe he also has some manager experience in his background and he might be one that is like Eric at Soco one day. You can tell he probably excels at anything he does in boh. We have just needed to establish a solid dough guy and within two days with Alex from NOLO, Alex came to me and told me Myke was the one. That he would become King of Dough. 
    • Bernadina: She is new to prep but a badass! She is solid! She has hustle, always in good mood and always smiling. She is a great addition to prep as we are going to lose Wendy in that area as she trains and comes into her shift lead fold. 
    • Ronaldo: Francisco referred him as its his cousin and he has been great. Great team mate, worker and leader. He takes initiative and want to grow and keep learning more and more. He is very strong in marsal area and I bumped him up as well as we need to keep him around!
    • Wendy: What can I say about Wendy...she rocks! Great attitude, personality and can hang in boh. She only had couple months at NOLO before coming to Midtown and you would have never known it if you saw her through training. She does anything asked of her and has even stepped in and does Spanish orientation for Mettler. Super excited about her coming onto the management side of team and I can not wait to grow her into the next KM. I see her staying with Home Slice for a long time!
    • I AM GETTING WITH ADAM WITH SIZES FOR THESE EMPLOYEES SO I CAN GET THEM SOME SWAG TO SHOW OUR APPRECIATION FOR ALL THE HARD WORK THROUGH TRAINING AND ON!
  • All and all fairly slow day compared to the other days we have had. Boh did a great job and I did not see any issues from foh :)
  • We were able to start closing roto line down at 2:20pm and switching it all to marsal so that we could start closing since it is slow.
