 PM SHIFT BREAKDOWN:

- Sales for PM shift from 4pm-12am was $4825.43 and labor total at end of day was 101.3% in toast. I definitely would like to sit down and learn a bit more about toast. I will definitely note for the manager meeting. We did not have Rubil in pm due to him being sick so Will worked a mid today on roto and as soon as we could kick him out at 7ish we did. I then moved over Jose from Marsal to help out Mikel as he is newer on roto and wanted to protect boh not knowing how busy we would be. We did have some issues during the shift but nothing super major just items we need to get ahold of and make sure we are on top of moving forward. 

    -We are going to up yeast in a batch of Sicilian to 25g just to see if that give it the kick it needs as raising the yeast in the garlic knots has solved that. Showed Adam the knots this evening. They are in the walk in ready to be pulled out. 

-Sicilians are sticking more to pans so we need to make sure we are washing them by hand and also using enough oil on them.

-Cookies are ready to go in cooler to be baked off.

-Romaine- we were lucky that we were able to run to store as we were slow and grab some but we did not have any back up romaine going into the pm shift. We need to make sure to communicate any produce or any item that is short in the shift. If you let me know I will do my best to get it to store asap but once we get busy we will not have this luxury of just being able to go grab so please be putting hands on items in store and making sure we have it in house. 

-We did not have any sausage prepped today? We again were able to get it done just something we need to keep eye on is our toppings cooler

-We did not have any back up shredded lettuce in prep cooler at all. We had one back up under line which got us through but gain, we should have all items in prep cooler and they should have back ups. 

-House Dressing we had to make on fly, Cristina made it with Islay and we were good just another item we need to monitor in prep coolers and on line.

-We do not need to prep as much broccoli as we have been so we can definitely cut back on those.

-We are going to cut back our crushed pepper to 50% of what we are putting in caesar dressing and we will have that done in am so that Adam can try and see if that's better. We did try it together tonight and it was good but spicy. 

-We need to keep our boh staff busy. It will be easier next week with our full management team in but if there are no tickets they can clean, organize, run trash, clean stairs or study on the line. But bottom line we need to really be on top of them about this as they are getting better but they have their moments so let's continue to manage it the best we can.


All and all good shift tonight. We had couple fly pies due to oval shapes but nothing crazy. There were a few tickets that did not have correct times but not as many as the other night. We did close down the line in back at 10am and moved everything to marsal and moved over two from back to front and that went great. Cristina was there giving all her advice and worked side by side with Sylvia in marsal. Sylvia has been doing a great job and she was a great hire from Kaylana :) 

Jose was great this evening and ran my breaks for me. We had a mid on line and roto which made it easy to do without really stepping in at all. Boh is able to do the 2 every 5 and I believe we could hit 3 in am and in pm at this point.

Niki and James were great tonight as any issue I had with tickets or anything I saw they took care of right away and handled it. Haylee did great too! Really good shift working with them all tonight. 

All and all a good day with some minor hick ups but we will continue to work on things and get better and learn. I know that in the next few weeks we will be solid if we take the time to fix and adjust to our issues in boh.
