Friday 2/10/23 PM BOH CG-MID, Lana-closer


1.  How many pies did we run on the timesheet (⅖, ⅗, etc)?

We ran 4 every 5 in the pm shift. 

2. KMOD stuff

We need to continue to monitor Gabino on writing the last initial on boxes at expo. I caught him and let him know to make sure he was getting those initials. He is writing the last name if it's on there. Let's just monitor this as when expo gets them we need to make sure we are doing our part to make sure they get the right pie to the right guest. 

Please get in any agenda topics by Monday 2/13/23 by 4pm for the KMOD meeting we are going to be having. 


 3. Food stuff (Notes about food issues)

I took out the caesar dressing recipe from prep book as it was not the correct one we are using. We have been using the one that NOLO uses and I have put that in prep book so there is NO other copy of this recipe so we should not have any issues with this moving forward. Not sure why that one made it into prep book but let's make sure we are using the right recipe. 

Sicilians looked good today. We are going to make sure we go into Sunday with 2 batches of Sicilians so that we have 40 for Super Bowl. 

We did get a few more provolone and pepperoni from Houston Deli just to be safe as we are not sure how Sunday will be and we do not want to run out!

Raymond organized produce cooler so that it will be easier to fifo produce items like cucumbers, broccoli, etc that we do not use tons of. we also discussed maybe going with 5lb of cucumbers at a time vs getting the case that we are not going through fast enough before they end up going bad.

We also spoke with prep team and salad sandwich team about when they are preparing break food for staff. There is to be only ONE protein unless you're getting an Italian assorted. Roger today had chicken, meatballs and sandwich meat along with his monstrosity of a salad. We showed this to him and of course he denied it but Lia told us what he asked for. We will do one protein with a salad but no more. This is something we need to watch as we let them eat but that is taking advantage of us and it will not be tolerated. That is not a team mentality to have if they are doing this. 



4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc)

Evan, Gonzalo, Tamara and Maikel ran line on roto. We did time Evan and Gonzalo how long it took them start to finish on pounding. (scraping dough to the time it is put on peel and ready to be sauced). Evan was able to do it in 47 seconds and Gonzalo did it in 41 seconds. I let them know that the goal for them would be 35 seconds. Then Evan said hold my dough and did it in 31 seconds! We will keep timing and pushing them and making it fun to see what they can do. Tamara and Maikel did a good job at making sure that when they place pies on rack to put them in order which is huge for roto loading pies in on time. 

Rubil and Gabino were on Rotoflex. Rubil did a much better job at staging pies into roto and keeping them in order. Gabino had a couple boxes that he missed initials on but after he was shown he made sure to get those on boxes for pies for expo. He tends to forget those initials when they are getting the rush. 

Marsal: Jose P, Silvia, Ideal and Roxana did a great job in running in marsal. They work really well together. Henry was suppose to be there and Jose was suppose to be in back but Henry let Lana know that he had to get his tooth pulled and he was unable to come in today and he got his shift covered by Maikel. Since Maikel is a topper we just made that switch for pm. 

Prep team did well tonight. They stayed on task and helped roll dough out as well. 

FOH: Took a few pictures of no times on tickets. Lana and I did get with Niki when this happened and Niki even caught one before we did and was all over it! Thanks NIKI!!! There were couple of overbooking by one and each time of those overbooking I got with Niki and times were taken at the end and all went through about same time so we overbooked. Hopefully we can try Niki's suggestion this next week of them putting down times at end to see if this helps this issue as I would love to increase pies at pm but they will have serious issues if overbooking keeps happening. There was also two tickets that did not print in kitchen. One James got us the ticket for the pies but then was asking where the salad was and that ticket did not print there either. It was made on the fly but not sure what happened there. There was also a caprese on the fly that he did not communicate to me or Lana so I had to ask about that. I have noticed that expos in foh are not communicating with kmods when these kind of things pop up. Kmods just need to know what is going on so that we can make sure we are doing what we need to. It's not about fault but rather just trying to make sure these mistakes do not happen. 


5. How did you show love? (verbal hi-5’s, public praise, complemented food, etc.

Gave Evan praise for trying to beat his pound time and gave him a cookie which he is obsessed with as a thank you for him hustling his shift.

  • Speed is definitely a need. But they killed it today 7
