Saturday 2/18/23 AM BOH GOOLSBY


1.  How many pies did we run on the timesheet (⅖, ⅗, etc)?

5 every 5 in am. We have opened up all 5 time slots but business has been dead in am. Charles did give ok to Raymond to hit up his contacts in med center and he is doing some grass roots marketing this coming week with them and hopefully we can start getting some large orders going in am so that we can get more sales in am. 

2. KMOD stuff

I baked off cookies this morning as we needed them but we have no Bernadine this morning or Juan. Let's make sure we are aware of these things or we can discuss on Tuesday maybe the opening managers bake off cookies? Just a thought as we have time in am to do and it does not take alot of time. We are going to need to start making sub bread as we are down to what is in freezer. I have it on dough list today as we only had 2 batches to do so we should be set to not make dough tonight. 

Andres did come in and I wanted to see and give him a chance as I wanted to make sure I am not being unfair. He spent 25 minutes in bathroom not sure what he was doing but when he walked back to marsal I asked where he was and he told me in the back which was a lie so I sent him home. We will let go of him tomorrow as I am not in the greatest of moods (not feeling well but tested neg for covid). He was not in the back as I was walking it up and down for 25 minutes and so that was a lie. We will term tomorrow. 

I am looking through blogger for Ana stuff. I will make sure to find that all today so that tomorrow we can term.

 3. Food stuff (Notes about food issues)

We need to watch Sicilians at end of night as there was about 14 of them that were left over from last night that were all bubbly and we can not use. Let's be proactive with those Sicilian pans as we have to have enough to bake off cookies (2 pans each tray we bake) and also for pressing down more Sicilians for next day. Let's also make sure they are cleaning them as they were definitely not cleaned and I had to wipe down and they had oil and dough and I even saw sauce on them. Not sure who cleaned them yesterday but we definitely need to speak with them!

There was one ticket with no time, one ticket with only 17 minutes to make and one fly pie due to foh dropping it infront of the guest. They also did not reprint ticket and re enter it in. So one pie will be unaccounted for foh. MOD did know of fly pie after it was asked for by expo. 


4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc)

Ronaldo and Jodi ran marsal. It was slow and they were able to run marsal and make pies up front as well. They are going to load up on pies before they leave this afternoon as well. Very solid team of two with them just need the business in am to push them. 

Will was on roto and he is still solid. He had no issues and hit all times on roto.

Edwin, Pedro and Leo ran line in back. They did great. They are fast. Edwin is not as fast at topping as them but he can pound quick and his pounds are solid. 

Salad sandwich was Cintia and Lia. They did well and hit times on station. They were not super busy but they did get some tickets for some subs during lunch. 

Prep team: Joel is hustling and getting prep done as is Isabel. I have been watching Islay and she is taking her time. she is not hustling. We need to pull her aside and talk as newer prep staff are becoming more valuable then her and she should be solid by this point as she has been in prep since beginning of training. She took a hour to peel red bells and it was only 3 trays. 


5. How did you show love? (verbal hi-5’s, public praise, complemented food, etc.

Let Joel know how much we appreciate him stepping up and really giving his all even though he is going through alot in his personal life. He has really stepped up in last few weeks for sure and is big help to KMODS.

 6. What did you teach someone today

Showed Islay where the back up light brown sugar is stored at.(upstairs in overflow shelf)

7. Repair issues

We need to have Ross put up small ticket rails at roto line to stage tickets and also put up wire baskets for eco lab and msds book and also the prep books! We will get those up Tuesday!
