FRIDAY 5/19/23 AM BOH CG

Notes about the shift in general:

 Very slow shift for a Friday. Did not see as many people out and about as normal. Weather is nice and sunny and not too hot.




Next shift be on the lookout for:


Making sure Sicilians are put in dough cooler. Definitely need to check them about noon and see bc they are rising and some almost wanna bust out if you leave too long out. I have noticed last couple days around 12/1230pm I am getting them back in walk in. Just keep eye on those and also garlic knots!

Making sure that cardboard is in drains everyday. There have been some afternoons coming in with no cardboard in drains, just need to be

2. KMOD stuff:


We need to make sure we are baking off at least 50 cookies per bake off. Towards weekend maybe even 75/80 as we are starting to see more milk and cookies coming in and with summer time this might become a thing with the kiddos. Let's be prepared!

Let's make sure we are not putting in the grates into baby oven unless they are covered. Looks like last night they had a great intention of putting them in the baby oven but they were not covered. They can put in at night after close but wrap them please.

Water on floors: We really need to try to squeegee as much as we can at night as there are pools in hallway, at expo, under flour bags and mixer and also near restroom and in restroom. Let's make sure we are doing all we can to get it as dry as we can. Sitting water will NOT help with nats and mosquitos and this is Houston so summer time is bad enough without giving them condos in our boh.  


3. Food stuff:


Jose Puac did good on cookie bake off. He baked off 60 and there was one tray that came out a bit undercooked and we wasted those but have a stack of cookies up front. We definitely need to over bake and not go light as we have to figure that some will be wasted and that way we have plenty for the day. No big orders. Biggest order Was 6 pies at 11:15am.


4. Sales for the shift: 


Right at 4pm we were just a little over 2k in sales. 

5. Labor for the shift:


at 4pm we are sitting at 58%


People:


Dough/Dish: Meredith got in and got on dough and is almost done with list and will definitely be done early and have time to do Sicilian press and also leave before time tonight as she is out at 10pm as we are only running one dough person as a mid.

Prep:Joel was on prep with Edwin still training prep as well. Joel put up the truck and then about 12pm I sent him to go grab grated parm from PFG as I missed it on order so we have plenty now and will have enough to get through weekend.  

Z1R:Pedro ran pounding and did a good job. He does need to work on getting better pounds with the crust as his tend to be flatter and not as pretty. But pounds were even and had no thin pies.

Z2R: No topper in am as kmod on duty stepping in. Did not have to step in much as it was not super busy ever and between Pedro and Will they were on it! Juan Pu also was in back helping out before open to ensure all slices were ready to go at open and up to standard.

Z3R: Will ran roto and did a great job. He had not kick backs or messed up pies. He's

solid on roto and I will get him to be a kmod one day! one day....

Z1M:Juan Pu ran marsal. He did a good job. He just needs to continue to practice his loading as some were a bit oval but all and all very few slices thrown out before open. Threw out a few slices due to crust being too flat and small or just not up to standard. There were maybe 6 slices I tossed and they were marked for waste.

Sub/Salad: Leticia did a great job as normal. She made sure she was stocked up and got bread bagged up.


6. How did you show love?


Told Jose Puac good job with Bread and cookie bake off! Even Ross thanked him!


Told Joel thank you for grabbing our will call and got him some gas money as well for making the drive to PFG.

8. Repair issues:


Only repair issue is dish machine but autochlor is getting parts ordered and dish machine is okay to run like it is until then as its a bolt on inside of machine insert.

Notes for FOH: Foh did a good job! only one ticket with no time on salad sandwich but other then that no issues. Also good job on getting slices out!
