Notes about the shift in general: 

The shift started slow and then started to build. We had a few small pops but ticket stayed on time most of the night. Lino was cross training and had a few miss toppings.  I moved his training to a slower time. There weren’t many people to cut, based on the prior night’s activity at the end of the night. Dough and prep were cut early. We were able to get detail cleaning completed.


All invoices were scanned and uploaded 

Snapshot checked and there is nothing pending at this time


Next shift be on the lookout for:

Any product listed on the farm report

Please continue to keep cleanliness in the forefront of our team’s mind.

This is the latest farm report, a helpful tool in purchasing our produce.

Market Alerts

Tomatoes are short as the south wraps up for the season. Quality and supply will be an issue over the next few weeks regarding all tomatoes.

Garlic is in light supply

Onions medium is in light supply

People:

Sub/Salad: Leti did what Leti does and kept up with a big rush of tickets.

Dough/Dish:  Bailey completed the last two dough makes on the list by himself. I told him that we will follow his dough all the way to the oven for the next couple of days and see what the final product is like.  

Prep: Eli did very well completing the prep list. 

Z1R:  Renaldo really pushed to keep the tickets on time and moving                                                  Z2R: 

Z3R:   Jose was really on top of rotoflex.

Z1M:

Z3M: Roxana did very well at marsal. 


6. How did you show love?

 I gave Ronaldo a verbal high five for pounding out for both marsal and rotoflex

7. What did you teach someone today?

I worked with Lino on the topping basics

8. Repairs: 

We are still waiting for the final repairs on the dishwasher internal rack


Notes for FOH: Only a few slices were waiting.  They were very busy during the pop.
