Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:

 walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization.

the bathroom also, i had to pick up a bit.

 

we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot

2. KMOD stuff:

I organized upstairs.
i update the prep sheet pars on a few items and got it printed and laminated for tomorrow.


3. Food stuff:

sicilians showed promise today walking in. and started baking off well around 1. i rolled them in at 2.

red bells are still looking really good.

People:


Dough/Dish:gerardo and jose both worked. they are both getting better about not clocking in early for their shift. I am seeing don jose coming in early and just working without clocking in. i dont love to see this. they did fall behind a bit because of desserts.

Prep: Alis and dina both worked on prep today. alis leading and dina helping out between working on desserts. dina also helped a lot at with dough today.

Z1R:Ronaldo came in and jumped into working without a problem and got a whole lot done today

Z2R:

Z3R: juan was doing well today and got us ahead on house pies so that we could work on the early order

Z1M:

Z3M:meredith worked marsal for most the shift so that she could keep

Z4M: 

Sub/Salad: Lorena is getting better at opening. i think were ironing out her small inconsistencies. shes doing really well with keeping up with labeling everything

I showed lorena how to do the large order salads. she did well. she had a lot of attention to detail

The stuff about the stuff:  

the upstairs storage was very disorganized this morning. im unsure who put away the order, but lets make sure that they are labeling dry food with received date and unpacking boxes. there was just a lot of stuff that was shoved on random shelves. also there was a box that was empty and left on the shelf. i got with ross regarding this.

 

 

Notes for FOH:

It was a great day with the foh. ross and i had a good preshift catch up on all things going on today. Gerardo is a great energy to have around
