Notes about the shift in general:
When I arrived the rain has not started the downpour, but minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers. The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and marsal on some days. We communicated with the staff about the reduced hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift. The BOH will crosstrain on FOH very basic duties in the event a FOH manager has to leave on a emergency. Ross and CG identified the absolute minimum that is required to close the FOH and the BOH managers will train on those areas. The Midtown management team realize that we have to be self-supporting in the event of emergencies. It was good to the overwhelming support in this objective.
Next shift be on the lookout for:

3. Food stuff:
• Please remind roto to bring the vegan cheese cutter to the line
• Sicilians had a good rise and salad dressings were approved
• We may be looking at higher produce cost for:
o Red Onions
o Iceberg
o Romaine
o Lemons
o Red Cabbage
o Jumbo Carrots
Food Pricing Awareness: This is just to be mindful of food cost and not intended to deter us from having an adequate supply on hand. Again, just be aware when receiving these products we should not accept anything but the best quality possible.

7. What did you teach someone today?
It was a self educating opportunity . I walked the store after the truck was FIFO’d and put away. I was looking at the end result of my truck order. I focused any shortfalls in supplies that needed to be address as well as any opportunity to control food cost.
8. Repair issues: There is no noteworthy R&M at this time

Notes for FOH: The FOH did well and with no slices waiting to be ran. We had exceptional communication with the FOH and the shift went smoothly.
