Notes about the shift in general:

 it was a good shift. i went heavy on prep first thing in the morning. remember Sunday we have Juan and we have no prep on Monday morning so we need to be working a day ahead on prep. The line finished prep very early on and took care of the line really well. he only had a few items that were out of date but quality was good. most orders came in very early in but BEK showed up mid lunch rush and that one was a bit harder to get moved away. the shift itself started off relatively slow and picked up around 12:30. it was a solid flow of business after that. dough did well and cookies and bread looked great. He knocked out his list pretty well, but i did have to force him to take a break. breaks were done by 1:30. we got things put away. overall a good shift.




Next shift be on the lookout for:

nothing is crazy just make sure to check prep before the shift. we have a good amount of everything.
salad may need to prep more papers. Leo had more prep today and couldn't get to it



1.How many pies did we run on the timesheet?

2. KMOD stuff:

i got the schedule posted. please be mindful of prep. if dina will no be here the next day, we need to prep more than the par.


3. Food stuff:

Sicilian was good today. rolled it in pretty early but we need to monitor the others i pulled out around 12pm

Dough/Dish:Don jose had a good amount of recipes with 6 and he started the day off with panitos which took him a good while

Prep: Dina tackled her list and today was a long one. i will get with her before she goes to see what she will need help with

Z1R:juan did well. pies got made and were consistent,he wss the first to finish his list today

Z2R:

Z3R: Pedro knocked out his list early as well. he knocked out line prep early on as well. portioned mushrooms and cheeses quickly. I did have to remind him to tag the dough again

Z3M:Ronaldo came in and got to work immediately. he organized well and took good care of the pizza make log

Z4M: 

Sub/Salad: Leo did exceptionally well today. he was working through the whole shift. task after task. i loved to see him staying busy


6. How did you show love?

i thank leo for working so hard today
 

7. What did you teach someone today?

i let Juan and Pedro know that it should only be 6 portions of eggplant in the containers

8. Repair issues:

i spoke with Meredith about Kevin plowing down our chain post. she understand that he needs to be respectful of the property

The stuff about the stuff:  

next week Meredith will work a long Monday shift to get tiramisu done. this felt better than having here work 6 days as we need her for dish.

Notes for FOH:

Things ran really well. it seemed like a team focused shift and a productive one. great communication.

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
