10/26/24 Saturday Mid w/Raymond
Notes about the shift in general: Due to sales , I need to pick up a few item from will call. When I arrived I started to work on Sundays truck order. The truck order for SOFO was submitted. I the walked the store looking any shortages. I checked with Ronaldo to how things were going and he was on top of things. I turned my attention to prep and the quality of the produce order. Dina worked and completed extra produce. I completed my figure 8 for BOH and found a few items in the dough cooler that needed to be FIFO correctly. We still have 3 halves of ham for tomorrow. I am going to have to execute a real Machiavellian move tomorrow to get my hands on more ham. We should have more ham on Tuesday, so the concern is for Monday.

The shift was very busy and all stations were hit pretty hard until 8:30 p.m. We had one over booking around the Texans' large order. Other than that, everything went well.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
