Friday 10/17/24 AM WILL MID CG BOH
Notes about the shift in general:
When I arrived chains were down and some debris in the parking lot. Solid close by Bailey last night (his first keyholder shift). Received and put away orders from BEK, PFG, Sofo, Houston Avocado, Houston Deli. No deferred orders but started with a six pie, three 12" sub order at 11. Nice steady day with enough breathing room to knock out prep and stay on top of house pies. Flow of business was a little unusual: heavy at 11am, slowed down by noon when normally it would be picking up, and then little pops throughout the day. Awesome team which makes my life easy.
CG: came in at 11:30am. Parking around area was packed! Lots of foot traffic around as it was a beautiful morning. Great weather for the patio! Guests definitely took advantage of that today. Came in and took over Marsal for Will and let him go to the back and run breaks and finish up putting up orders as BEK came later. Had some small pops in marsal but nothing big at all. Orders were coming in but did not feel busy at all in boh.
Next shift be on the lookout for:
85 Italian Assorted due to sourcing issues. Should be enough to get us through the weekend but no employees por favor.1.How many pies did we run on the timesheet?

2. KMOD stuff:
Capicola and orange Fanta was not delivered by BEK today as they were OUT but Raymond let me know today that Brian our rep will be hot shoting the capicola to us.
3. Food stuff:
Sicilians were a little more bubbly and uneven today. Almost surely due to using things other than flour to weigh them down last night. Still a nice rise. House pies were solid, sauce and dressings tasted correct, produce looked good.4. Sales for the shift:

Dough/Dish: Gerardo knocked out all the dough and bread on his own so he gets my vote for MVP Meredith was on dish and did a great job keeping dish pit clean and keeping on top of everything coming in. She finished up Sicilians as well.
Prep: Dina
Z1R: Juan Danilo did great on pounding and Juan Carlos also pounded with him as I topped on line this evening to keep line moving.
Z2R:
Z3R: Pedro Carlos and Gabino ran roto and helped top as well through pop tonight. Both did great as always.
Z1M:Ramona did amazing as she always does and made sure marsal was full and handled it like a boss.

Sub/Salad: Leo Leti did great and had beautiful subs coming out tonight! She is also key closer tonight!
6. How did you show love?
Made sure to let them know they kicked butt and did a great job tonight! Also made sure that they all had breaks by 8:30pm.

Notes for FOH: Great work and communication from Ross, Keri, and Gerardo.
foh was moving tonight and working as a team really well. Ryan was on top of the over booking they had tonight and did great making sure foh was running smooth. Bailey stayed out front and ran slices and bussed tables. Did really well tonight. Nice having him in foh just in case he is needed.
