12/29/22 AM BOH
- Today Sicilians looked good! Nice rise and all hitting all four corners of pan. Wendy pressed them down with 100 vs 50 pounds and it's working great! We have a batch rolled out already and we made two batches this morning as I really want to try to keep Sicilian whole pies until close and not 86 ever. I think we finally got it where we need it.
- Garlic knots are looking good! Nice rise and good size. We need to make sure to be making 2 batches so that we can have two racks ready at all times. We did throw away about 100 knots as they were old in dough cooler and already started to deflate as well. We are good with 1.5 racks at 3pm going into tonight.
- We made 3 batches of rice crispys for today and made sure to bake off 12 trays of chocolate chips as we had left over cookies and rice crispy treats from yesterday!
- placed a produce order for tomorrow, very small. Just needed some more mushrooms and iceberg lettuce.
- I organized the NA BEV shelf I gave to foh. I had asked for 2 weeks now that it be done and since it has not I just did myself. I did put a sign up to keep organized and not to open multiple beverages as there were 2 open boxes for each of the drinks on shelf. I showed Ross and he is going to have foh restock it and keep up. I let him know as long as it is organized they can keep whatever drinks on whatever shelves work best for them for their storage in there.
- Got all dry goods and cans put up. Everything is up and put together. I am working on dough cooler as that will be a project since today I put up all dry goods up stairs and paper goods so that we do not have an unorganized disaster. I am going to organize dry storage and paper goods up stairs on Tuesday next week with Bailee as we both want to get it more organized and for products on shelves to make more sense. (all foh items, boh items and small wares more uniform and together)
- All invoices are up to date and scanned into Xtra Chef and in food purchases spread sheet already.
- Dez was only one who did not show up this morning. I tried reaching out but no luck. I got a text later in afternoon from Van that Dez is in jail and is waiting to get bonded out. He had outstanding warrants(not sure for what but I have not heard from Dez himself yet)
- Chris G had asked if he could come in am instead of pm which I approved but then he did not show up so I will see if he shows up today and decided to work his normal shift. He was suppose to be going out of town tomorrow so he was wanting to leave earlier as if he closed it would be really late.
- Everyone in AM shift took break.
- Wendy worked with Jeffrey today as he has not picked up speed in prep at all. Very very nice guy but I do not think he is going to work out. Next shift we need to pull him aside and talk and put on probation or part ways but we have given him 2 weeks now and we are at that point.
- Joel has improved. He has been super helpful and getting his prep done. He left early today at 2pm as his daughters daycare was closing early today.
- I have food sheet for Cynthia M. to have for Pm shift break food and waste and she will get that to closing manager when we close.
- We need to make sure we are making some dough for kits as foh sold 2 today so just so we have it ready. Let's talk about this next meeting and see about having some set up ready to go as much as we can like soco does.
- There was only one ticket I saw that did not give us right time for order as it only had 12 minutes time to make and bake off pie. I let foh know so they could give guest more accurate time.
- Weather was nice this morning and afternoon but was not super busy. We are making sure to have pies ready to go in marsal by 4pm so that slices stay on time and do not lag.
- I made manager schedule for next week and I am taking an additional day as I have 6 days this week and extra hours. This has already been over this with Fowler and Charles so all good on that end. I also made sure to have coverage when I am out of building as well.
- Numbers are in the dough calculator for where we are at on dough. We are looking good we just need to make sure that we are putting dough back in dough cooler at night and not running into the problem of throwing out dough as having to do that couple weeks back has been a hurdle to push through. Let's just make sure to double check and if you're not sure please slack KMODS!
- Sub bread looking good! Jose is doing great job at baking them off in am. We need to continue to stock up on it and we can freeze some if needed, but let's just keep ahead!
- Ronaldo stayed as we needed more in marsal tonight so he will be in OT but it was huge help!
- Jordy came in tonight instead of yesterday as we had enough people yesterday but needed more hands on deck tonight.
- We need to talk again with Roxana C and let her know that this week she either picks up pace or we will part ways. She knows her stuff, just not sure how well she's reading tickets as English she does not know. We need to sit with her on station and see as well.
- Leticia stayed and helped which was huge help as well! She's awesome and she did a great job!
- Only item we are lower on in building for tonight is red bells but we should have enough for rest of night.
- Roto did burn a Sicilian. We have two batches going into tomorrow and we need to make 2 batches every day so that we can not have to 86 whole sicilian pies.
- Mettler got in marsal and gave me a 5 min break and then. I jumped back in. He Rocks and it was very much appreciated. I wanted to let Cynthia M. run back while I was in building just for her to get more practice with it. Line lagged here and there 5-10 minutes but did well according to Mario and Niki. Mario also made me a coffee! MY hero at that point!!!
- All and all good pop tonight. Getting out of here now at 9:32pm. -CG
