Notes about the shift in general: When I arrived , the recycled dumpster lid was closed and there were no visible boxes to the public. It was a good close. All areas were clean and organized and the team did well on organizing the dough cooler. I completed the prep lists and passed them amount to the specified areas.
The ship was steady with good sails on sub/salad. BOH team members were able to take breaks. There was a 17, 6" sub order for 11:15 a.m. Somehow the order was not entered in Toast. That did not pose a problem for Leti. The order went out on time.
Next shift be on the lookout for:
Any items missing from the PFG truck order.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.
