Notes about the shift in general:  When I arrived the recycle dumpster was closed and there were no boxes visible to the public. I picked up anchovies and mailed the receipt to invoices. Cynthia picked up organic whole milk. Truck orders were entered for BEK SA, PFG and Southern Style Spices. I spent some time working with our BEK Houston Rep on pricing. A final review of the dough plan for the HSP party and the Super Bowl was completed. I will review the dough plan with the K-Mods and Cynthia. Schedules for the K-mods and BOH were approved and published. Leo completed detailed cleaning in the dough cooler. The shift was steady but not very busy. All BOH team members were able to take breaks. The Monday following the 2024 Super Bowl was slow at $5,055, but not much slower than our current Mondays. Our current Monday staffing should be adequate.


Next shift be on the lookout for:

Any items missing from the BEK or PFG truck orders.

2. KMOD stuff:

The roto refrigeration unit was freezing over. I reset the unit and it seems to he holding at the correct temperature. Please let me know if it freezes in the morning.


3. Food stuff:

Sicilians had a good rise and baked off nicely. Dressings were tasted and approved. 


Let's be sure to check all dairy for shelf life and breakage.


4. Sales for the shift: $3,740

5. Labor for the shift: 7.9%

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.
