SATURDAY 1.25.25 MID WILL
Notes about the shift in general:
Nice to walk into a full restaurant and a busier than average morning. Lots of slices and sandwiches. We had an 12 x 12" turkey sub order just before noon that wiped us out of turkey, but Dina was quick to replenish. Lunch rush kept moving until about 2:30pm, finished breaks, prep, and started setting up stations for the pm. All p.m. breaks were done by 8pm today. As Ronaldo mentioned he threw out 2 cases of mushrooms, we had a couple months there where they were consistently good, keep an eye out. We still have plenty to get through tomorrow.
1.How many pies did we run on the timesheet?
4/52. KMOD stuff:
Talked to Cynthia and Ronaldo about getting more of the guys on the pizza line properly cross trained on salad/sandwich. Tomorrow I'm going make another version of the salad cheat sheet in Spanish with a bigger font, easier for them to read, and this week we will focus on getting everyone more comfortable on that station.3. Food stuff:
Sicilians, house pies, to go pies, sauce, dressings all good4. Sales for the shift:
$11K5. Labor for the shift:
20%
Notes for FOH: Slices were moving, communication was solid, good shift from FOH.
