3/23/25 Sunday Mid w/Raymond


Notes about the shift in general:  I picked up Mexican Coke on the way in. When I arrived the recycle bin was closed and locked. When I entered CG went over the upcoming Car Art Show event. There is some planning needing to be done. We will do a walkthrough of the process and identify the best way to successfully participate in the event. The shift was not very busy. We had a few pops that helped sales. Breaks started at 6:30 pm and concluded at 8:00 p.m. All BOH team members were able to take breaks. Our sales were good yesterday and we went through quite a bit of inventory. I am going to pick up a few cases of pepperoni tomorrow.

Just before it was time for me to leave we were hit with a very large pop. It would be value added to find out where these pops are coming from. Today was the last day of the rodeo and that could have been a major contributing factor.


Next shift be on the lookout for:

More Pepperoni is coming in tomorrow

We will need to prep grated parm first thing in the a.m.

Please check our truck orders carefully.

We want to continue to look at the Margarita pies for even distribution of tomatoes. I took a house pie back for correction. 


3. Food stuff:

Sicilians had a good rise and baked off nicely. Dressing were tasted and approved

6. How did you show love? I gave Ramona a verbal high five for pushing and controlling a very large pop. 


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
