Notes about the shift in general: When I arrived, the dumpster was closed and locked. I stopped to pick up tomatoes due to the sharp increase in pricing. I walked the store and checked supplies before placing the BEK truck order for tomorrow. I called Republic again regarding their not picking up recycling. I was informed that one of their drivers called off and that impacted a number of routes. They will pick up tomorrow.

I called our Houston Avocado Rep and we discussed price corrections on tomatoes and when we could expect to see them. At this time they anticipate that pricing should get back to market norms in 1-2 weeks. In the meanwhile, I will continue to purchase 4X5 tomatoes from HEB at significant cost savings.

The shift started slow and then picked up at 6:00 p.m. Both the Roto and Marsal lines did well during the pop. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies and Roto pies. 

* FOH please go over the deferred order with the k-mods


3. Food stuff:

* The sicilians earlier in the day were a little flat, but then proofed and looked and tasted better. . Charles noticed that the Caesar salad was a little off. Leti made another batch and it was approved.

* Whole pies are looking very nice. 

* Produce prices are rising at an alarming rate. We anticipate that tomato prices will return to market norms in about 1-2 weeks. The farmers experience a gap in production. That gap caused supply and demand to run wild.

  1. 4X5 was $36 a case. It is now $76 a case
  2. Roma tomatoes were $31 a case. They are now $53 a case

6. How did you show love? I made a big deal about the compliments given to the team's product production. They know we have work to do, but they hang on every word from our Home Office. They almost take Picasso like pride in what they do.


Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.  We had a fly sub. The wrong sub was made.

Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. Notes about the shift in general:   starting my day when I entered the restaurant, everything looks pretty good so I started with the preparation list and delivered it to each area and also today the new one who works in preparation showed up, I already told Dina to teach her well, then we started to fill in the line, just like nine Houston avocado arrived I checked them it looks pretty good and then I arranged them and set a date on them and then we got a ticket for two pizzas for 10:40 and others but it was not until 11:30 so we started with all the pizzas, in front when it opened everything was ready if enough tickets came out, so I started the breaks from 12 we managed to finish around two, meanwhile I was in front, if a lot of Pizza Slice was sold, as well as Pizza to go all day, we were always on the move and also finishing some preparation that we had pending, already at three we started to fill in front, since if a lot of slices were sold, when they came in The afternoon te...

Notes about the shift in general:  When I arrived I checked the recycle Bini and it was closed and locked. When I entered the building I checked the truck orders.. I then placed the Houston Deli order. I made a trip over to the storage unit to relocate 21 oz. cups to the store as a precaution. I went over quality concerns with our Sofo and PFG Reps. The shift was not very busy. Breaks started at 6:00 p.m. and ended at 7:45 p.m. All BOH team members were able to take a break. Next shift be on the lookout for 1.How many pies did we run on the timesheet?  4/5 2. KMOD stuff: K-Mods, I know we have new team members just out of training. A quick look at our financials for last week shows that we are trending up on "Our Bad" comps. Let's focus on this and identify how to reduce these errors.  I noticed that a few of our house pie's par bake is a little over-baked. and a few areas of the crust is too thin.
