FRIDAY 10.2.26 BOH AM WILL

Notes about the shift in general: Good Friday. We started off with deliveries from BEK, Houston Avocado, Houston Deli, and Alsco. One broken buttermilk was added to the credit tracker. I helped put away and organize the deliveries, made garlic knots with Gerardo, then helped the team set up for the day. It was a steady shift with each station receiving some of the action, lots of 6+ pie tickets all day long, slices were moving, and there the crew knocked out a ton of prep. I went over everything that happened this week with Ronaldo. We also checked the ceiling, there was no water in the bins for the first time in awhile, so we closed it back up. Fully stocked Marsal for the PM. Notes about the shift in general: Steady Thursday. PFG delivered around 8:15 this morning. The repair people came to address the leak. They were the first repair folks who seemed to immediately identify the issue--A/C unit draining back into the HVAC system--and corrected it. We will know tomorrow if that did the trick. The rain kept our normal lunch crowd away, but tablet orders were heavier than normal. We had a 10-pie for noon, plus several other large tickets. I revised the schedule during my break. We restocked Marsal and I ordered produce to finish my shift. 10/1/26 Thursday Mid w/Raymond

Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I walked the perimeter and everything was in order. I walked the store and confirmed inventory . I placed the BEK and Hilltop Deli truck orders. All invoices were scanned to Xtra Chef. I am setting up interviews for the FOH tomorrow.   I am working on the Food Labor spreadsheet. I reviewed the credit tracker and I will contact vendors for updates. We has a rash of dented cans credits to track. The team members are very pleased with the new smoking area. The BOH schedule has been published.   It looks like the ceiling leak over Roto has been fixed. We will check int the morning and confirm.  The shift was steady with small pops. We had some foot traffic from First Thursday.
